It is suggested that there has been tendency to allocate more space for galley and its dependencies and, as result of this, in addition to availability of stainless steel and its wider use in construction of equipment, some ships have installations which can compete more than favorably with hotel and restaurant kitchens on shore; some of varying stages passed through to reach present high standards attained by manufacturers of cooking equipment and auxiliary machinery employed in ships' galleys are discussed; various ranges, ovens, and dishwashing machines are shown in illustrations; notes are given on installations in some specific ships.
