The invention provides a vehicle torque control method and device, and an electric vehicle. The vehicle torque control method comprises the following steps: the opening degree change rate of an accelerator pedal of the vehicle during treading and the opening degree value of the accelerator pedal after treading are monitored; the current treading state of the accelerator pedal is determined according to the opening degree change rate of the accelerator pedal; and the output torque of the vehicle is determined according to the accelerator pedal opening value and the treading state. The output torque meeting the requirements of a driver is determined according to the condition that the driver steps on the accelerator pedal, so that the driver can enjoy better driving experience.
