The invention relates to an engineering machinery hydraulic control system and engineering machinery, the engineering machinery hydraulic control system comprises a walking device, a variable pump, a motor, a first detection device, a second detection device, a third detection device, a fourth detection device and a control device, the first detection device detects the displacement of the variable pump; the second detection device detects the rotating speed of the motor, the third detection device detects the walking speed of the walking device, the fourth detection device detects the deflection angle of the walking device, and the control device is in signal connection with the variable pump, the motor, the first detection device, the second detection device and the third detection device. When the displacement of the variable pump exceeds or is smaller than a first preset value, the displacement, calculated according to the rotating speed of the motor, of the motor exceeds or is smaller than a second preset value; when the walking speed of the walking device exceeds or is smaller than a third preset value or the deflection angle of the walking device exceeds or is smaller than a fourth preset value, the displacement of the variable pump and/or the motor is adjusted.
