The invention relates to a method for controlling an angle of attack (A1) of a wing (100) of a wind-assisted propulsion system (1), said method comprising the following steps: measuring a parameter representative of a separation state of an air flow (F1) incident on the wing according to the angle of attack (A1) of the wing (100); determining a value (A1Dt2) of an angle of attack of the wing (100) corresponding to stall; determining a safety value (A1SD1t2) of the wing angle of attack according to the stall angle value (A1Dt2), wherein the safety value is smaller than the stall angle value; the orientation of the wing is controlled at an angle-of-attack setting value equal to the angle-of-attack safety value (A1SD1t2). The invention also relates to a system and a corresponding vessel.
