A composite, self-contained modular mobile field kitchen, now under development, will have the capacity to prepare, cook, and serve meals for 200 men. It can be readily transported by a towed dolly, on a 2 1/2-ton cargo truck, in an aircraft, or slung under a helicopter. While being transported over good roads it is capable of cooking meals which will be ready to serve when it reaches its destination. The small amount of electricity needed is supplied by an engine generator. Burners that use gasoline, diesel, CITE, or JP-4 fuel furnish heat for producing steam and for a grill and a convection oven. Steam is used for a pressure cooker and three wells in which soups, vegetables, stews, and other items are cooked. Individually served foods such as steaks, chops, and hamburgers are cooked on the grill. Large quantities of food can be stacked in the convection oven, where a blower circulates air to give more even temperature distribution. (Author)
