The present invention relates to an adaptive cruise control system and an adaptive cruise control method for a vehicle with a manual transmission capable of preventing a stall while operating an adaptive cruise control mode of the vehicle with the manual transmission by temporarily halting the adaptive cruise control mode if an engine RPM is lower than the minimum reference RPM while operating the adaptive cruise control mode performing an automatic acceleration and deceleration control to maintain a proper distance to a vehicle driving in the front. An embodiment of the present invention provides an adaptive cruise control system for a vehicle with a manual transmission include: a sensor unit sensing information about a vehicle driving in the front, an engine RPM, a position of the transmission, and a position of a clutch; and an electronic control unit temporarily halting an adaptive cruise control mode if the engine RPM sensed by the sensor unit is lower than the minimum reference RPM, when an input of a clutch is not sensed within a predetermined reference time after transmitting shifting request signals while operating the adaptive cruise control mode, in order to control acceleration and deceleration of the vehicle to maintain a proper distance to the vehicle driving in the front.
