The invention relates to a control method for a steer-by-wire system of a motor vehicle, which comprises the following steps of: firstly, detecting a current wheel turning angle of the motor vehicle in real time, feeding back the current wheel turning angle to the steer-by-wire system, and calculating a wheel turning angle deviation between a target wheel turning angle and the current wheel turning angle; then, according to the wheel steering angle deviation, a target magnetic field angle used for driving a stator of a steering motor of the steer-by-wire system is determined; then, determining a current magnetic field angle of a rotor of the steering motor, and calculating a magnetic field angle deviation between the target magnetic field angle of the stator and the current magnetic field angle of the rotor; finally, the excitation component current of the steering motor is obtained according to the magnetic field deviation look-up table, and the steering motor is controlled based on the excitation component current to rotate the wheels of the motor vehicle to the target wheel rotation angle. In addition, the invention further relates to a steer-by-wire system for operating the control method.
