The invention discloses a vehicle steering signal processing method and a vehicle. The method comprises the steps that an initial torque signal, an initial steering angle signal and a first steering signal of a vehicle are obtained, the initial torque signal and the initial steering angle signal are signals input into a target sensor through a target communication protocol, and the first steering signal is a steering angle deviation value of a steering wheel; determining a target torque based on the initial torque signal; a target rotation angle is determined based on the initial rotation angle signal and the first steering signal, the working state of a target sensor is determined at least based on the initial rotation angle signal, and the target torque and the target rotation angle act on a steering wheel; and responding to the working state as the target state, and controlling the vehicle to steer by using the target torque and the target turning angle. The technical problem of low vehicle steering control accuracy caused by poor precision of vehicle steering signals processed by related technologies is solved.
